Sardine & Tomato Bruschetta

Ingredients

 

  • 8 slices of ciabatta bread
  • 2 garlic cloves, halved
  • 4 tbsp of olive oil
  • 1-2 cans of sardines, (butterfly)
  • 2 tomatoes, diced
  • sea salt and ground black pepper to taste
  • fresh basil leaves for garnish

Instructions

  • Preheat oven to 375°F.Place the bread slices on a baking sheet and brush with olive oil.
  • Rub the garlic cloves onto the bread slices. Bake in the oven for 5-7 minutes or until crispy.In a mixing bowl, combine the mashed sardines and diced tomatoes.

  • Season with salt and pepper.Top the bread slices with the sardine and tomato mixture.

  • Garnish with fresh basil leaves
