When it comes to fresh and flavourful dishes, Zingy Lemon Fish is a standout choice. This delectable recipe features tender, flaky fish infused with the zesty tang of freshly squeezed lemons, perfectly balanced with a medley of herbs and spices.

Ingredients
- 250g fresh cod loin
- 3 tbsp butter
- 1 tbsp lemon juice
- 25g fine almond powder
- 1 tsp dried dill
- 1 tsp dried chives
- 1 tsp onion powder
- ½ tsp garlic powder
- Sea salt and freshly ground pepper
Instructions
- Mix in a bowl the almond flour, dill, chives, onion powder, garlic powder, salt, and pepper.
- Take the fresh fish fillets, one at a time, and toss in the mix until evenly covered
- In a large pan, heat half the butter and half the lemon juice over a medium-high heat.
- Let the fish cook for approximately 3 minutes.Don’t let your pan dry out. Add more butter or lemon juice if necessary.
- Flip the fish to cook for another 3 minutes. Again, give the pan and fish a bit of a swirl around.
- Check if the fish is done with a fork and remove from the pan when almost done.
- If you have steamed vegetables waiting, pour the butter with all the crunchy bits from the coating onto your veggies
- It makes a lovely dressing.
