Italian stew is a hearty dish that brings together the rich culinary traditions of Italy in one pot. Combining tender fish, fresh vegetables, aromatic herbs, and a robust tomato base, this meal is both comforting and satisfying. Especially on a chilly night.

Ingredients
- 1 tbsp olive oil
- 2 fish fillets Basa, cod, or haddock
- 1 onions & 2 cloves garlic (chopped)
- 2 sticks celery (chopped)
- 300g chopped tomatoes
- 250g potatoes (peeled and cut into 3–4cm chunks)
- 1 bay leaves
- 100g vegetable stock
- sea salt and ground black pepper to taste
- 1 lemon, sprig parsley & dill chopped
- 2 tbsp. capers (optional)
Instructions
- Heat the olive oil in a saucepan, and fry the onion and celery for 5 minutes. Add the garlic and continue to cook for 3 to 4 minutes.
- Add the tomatoes, potatoes, bay leaves and vegetable stock and season with salt and black pepper.
- Bring to the boil and simmer for 15 minutes. Add the fish and simmer for a further 10 to 15 minutes until the potatoes are tender and the fish is cooked.
- Add the lemon juice, herbs and capers.
- Check the seasoning - all you need is a spoon!
