Try yellow croaker in our stir-fry. Its tender, flaky, and pairs beautifully with a variety of fresh vegetables. It's also a standout ingredient in Asian-inspired cuisine. Hot, sweet, salty and crunchy and bitter this is umami at it's best!

Ingredients
- 50g yellow croaker fish, sliced, or add some prawns
- 100g vegetable oil
- 2 cloves garlic, minced
- 1 red chilli, thinly sliced
- Half thinly sliced green pepper
- 1 carrot cut into batons
- 1 can bean sprouts
- 1/2 tsp sugar
- 1/2 ground white pepper
- salt to taste
Instructions
- Fry salted yellow croaker fish in oil until the outside is golden brown. Set aside to cool, then cut into tiny slivers.
- Heat 2 tbsp oil (you can use the oil from deep frying the fish) in a wok on high heat.
- Sauté garlic until fragrant, about 1 minutes.
- Add deep fried salted fish, stir for 30 seconds.
- Add chilli and bean sprouts, season with salt, sugar, and ground white pepper. Stir for 30 seconds.
- Add shallots and hot water. Stir to mix. Once the liquid starts to boil, take off heat,.
- Transfer to a serving plate and serve immediately with steamed white rice.
