Seared Tuna & Soba: An Umami Harmony
Experience the perfect marriage of East Asian flavors and textures. We take flawlessly seared tuna, its exterior crisp and its center tender, and pair it with nutty, earthy soba noodles. The delicate, rich umami of the tuna is brilliantly enhanced by a light, savoUry soy-based marinade. This profile plays beautifully against the subtle, satisfying chew of the SOBA noodles, creating a complete harmony that is both refined and deeply satisfying.
                    Ingredients
- 1 tbsp. sunflower oil
 - 2 Tuna Steaks
 - 200g soba noodles
 - 1 cup soy beans (Edamame)
 - 1 cucumber
 - 1 pack Mangetout
 - 1 avocado (sliced)
 - 2 spring onions
 - Sea salt & ground black pepper
 - pickled ginger (to serve) and sesame seeds
 
Marinade for Tuna
- 1 tsp. caster sugar
 - 1 tsp. wasabi paste
 - 1/3 cup Yuzu Ponzu, Citrus
 - 1 tbsp. rice wine
 - 1 tsp. fish sauce
 - 1 lime
 
Instructions
- Sprinkle the sesame seeds on and around the tuna then slice diagonally
 - Soak the noodles in boiling water for 5 mins - drain then add all ingredients and stir fry in the sunflower oil for 5 mins
 - Serve and garnish with ginger
