Seared Tuna & Soba Noodles

Ingredients

 

1 tbsp. sunflower oil

2 tuna steaks  

200 grams soba noodles

1 cup soy beans (edamame)

1 cucumber 

1 pack mangetout

1 avocado (sliced)

2 spring onions 

pickled ginger (to serve) and  sesame seeds

Marinade for Tuna

1 tsp. caster sugar

1 tsp. wasabi paste

1/3 cup soy (ponzu, citrus)

1 tbsp. rice wine (mirin, Japanese)

1 tsp. fish sauce

1 lime

Sprinkle the sesame seeds on and around the tuna then slice diagonally

Soak the noodles in boiling water for 5 mins - drain then add all ingredients and stir fry in the sunflower oil for 5 mins

Serve and garnish with ginger
