Bursting with sweet, sour, salty, and spicy, our Thailand appetizer is a crowd-pleaser for any occasion. Made with succulent, marinated prawns, fresh herbs, and a zesty lime chili dressing, this dish is a refreshing start to any meal.

Ingredients
- ½ cucumber
- 2 spring onions, 1 red chilli
- 2 tbsp lime juice
- 2 tsp fish sauce
- 2 tsp sugar
- 150g king prawns
- 2 tbsp roasted peanuts
- 2 tbsp fried onions
- Coriander leaves to serve
Instructions

Cut the cucumber into batons and remove the seeds. Then chop the into small dice. Thinly slice the spring onions and red chilli and cucumber and add them to the bowl.

Mix the lime juice, fish sauce and sugar together and stir until the sugar has dissolved. Pour over the shrimp in one bowl and salad seperately. Place a heaped tsp of the the cucumber mixture into each spoon and top with a shrimp

Sprinkle over some roasted peanut, crispy onion and garnish with a coriander leaf.
