Our easy pancake recipe is perfect for any time in the day. Packed with plump juicy prawns. It's light, fluffy batter can be whipped up in no time. To elevate your prawn pancakes, make sure to use fresh, high-quality prawns and fresh pineapple chunks.

Ingredients
- 100g plain flour
- 100g fresh prawns
- 50g little gem lettuce
- 30g cocktail sauce
- 2 tbsp vegetable oil for frying
- 2 eggs
- 300ml milk
- Sea salt & ground black pepper
- pineapple chunks on the side
- Lemon to serve
Instructions
- Put plain flour, eggs, milk, veg oil and a pinch of salt into a bowl , whisk to a smooth batter then set aside for 30 mins to rest.
- Set a frying pan over a medium heat and carefully wipe it with some oiled kitchen paper.
- When hot, cook your pancakes for 1 min on each side until golden, using around half a ladleful of batter per pancake. Keep them warm in a low oven as you make the rest In a seperate bowl mix the prawns with the lettuce and cocktail sauce. Fill the pancakes.
- Serve with lemon wedges and pineapple.
