Tofu Tuna Cakes

Ingredients

  • 1 349g of extra firm tofu

  • 1 egg

  • 1 can of tuna 

  • 3 spring onions (save 1 for granish)

  • 1 red chilli
  • 1L olive oil
  • pinch of salt

  • pinch of ground black pepper

 

Instructions

  • Drain the tuna and tofu and using a fork, mash and mix both together.
  • Chop the spring onions and chilli finely and add seasoning, mix into the tuna and tofu mix
  • Drop in one egg to bind all the ingredients together.
  • Wet your hands and get a golf ball size of mix and roll in your hands until ball shape.
  • Flatten into round shapes. Heat the oil - approximately 200ml and shallow fry on each side for 2-3 minutes.
  • Once cooked, transport onto a piece of kitchen towel to absorb any excess oil
  • Serve with additional spring onion trimming and a dipping sauce of your choice.
