Peachy Salmon

Ingredients

  • 3 diced peaches (peel or unpeeled)
  • 1 pinch smoked paprika & cayenne

  • 1 pinch granulated garlic & onion

  • 1 tsp light brown sugar

  • 1 tsp sea & ground black pepper

  • 2 salmon fillets 

  • 2 tbsp vegetable oil

  • 1 avocado, 1 diced red onion

  • chopped coriander

  • 1 squeeze lemon

Instructions

  • Mix together paprika, garlic, onion, brown sugar, salt, pepper, and cayenne.
  • Sprinkle spice mixture evenly on all sides of the salmon.
  • Refrigerate uncovered while making the salsa and preheating the grill, about 20 minutes.
  • Make a salsa. Chop peaches, avocado, onion, coriander,  lemon juice, and salt.
  • Season to taste,If your peaches are a bit tart, you can  add a pinch of sugar.
  • Brush oil on the salmon and heat in a hot pan for 3-4 minutes each side
  • Serve with the salsa
