Basa omelette combines the delicate, flaky texture of basa fish with the fluffy richness of eggs to create a satisfying, protein-packed meal. This dish is not only incredibly easy to prepare but also versatile.

Ingredients
- 3 Eggs
- 3 tbsp Lactose Free Milk
- 2 Basa Fillets
- 1 red chilli chopped finely
- 2 spring onions - green part chopped
- Light olive oil
- 2 handfuls of Baby Spinach
- Sea salt and Ground Black Pepper
- Coriander chopped roughly
- Free from Grated Mozzarella
Instructions
- Heat the oil in a pan and add the spring onion and chilli.
- Cook 1 minute.
- Chop up the fish and add to the pan.
- Mix eggs, milk, salt and pepper and beat together.
- Add the spinach to the eggs.
- When the fish is almost cooked through, add the eggs to the pan.
- Cook until the base is set.
- Sprinkle with the coriander, sprinkle over a handful cheese over the omelette and place a plate on top and rest for 5 mins.
- Flip in half with a spatula and serve.
