Sardines & Gooseberry Toast

  • Ingredients  

  • 2 tbsp olive oil

  • 1 tbsp dried basil and oregano

  • 1 tin sardines

  • 1 tsp red pepper flakes

  • 1 baguette sliced

  • 2 tbsp butter

Sauce

  • 250g gooseberries, (half) topped and tailed

  • 25g butter

  • 1 tbsp caster sugar

Instructions 

  • Add olive oil to a pan with basil, salt, pepper, and dried oregano. Add sardines for 2 minutes.
  • Meanwhile, and the gooseberries to a saucepan with butter and suger and simmer for 5 minutes. Mash slightly
  • Crisp up the slices of baguette by melting butter in a nonstick pan.
  • Place the bread into the pan and crisp on each side until golden brown, 2-3 minutes.
  • Place a full or half sardine on top.
  • Smash the sardine to spread it around and top with red pepper flakes and a drizzle of the gooseberry sauce
