Ingredients

2 tbsp olive oil

1 tbsp dried basil and oregano

1 tin sardines

1 tsp red pepper flakes

1 baguette sliced

2 tbsp butter
Sauce

250g gooseberries, (half) topped and tailed

25g butter

1 tbsp caster sugar
Instructions

Add olive oil to a pan with basil, salt, pepper, and dried oregano.

Add sardines for 2 minutes.

Meanwhile, and the gooseberries to a saucepan with butter and suger and simmer for 5 minutes.

Mash slightly

Crisp up the slices of baguette by melting butter in a nonstick pan.

Place the bread into the pan and crisp on each side until golden brown, 2-3 minutes.

Place a full or half sardine on top.

Smash the sardine to spread it around and top with red pepper flakes and a drizzle of the gooseberry sauce
