Mackerel Ploughmans

What is so simple about this dish is as a Ploughman it would be a lunch you could take into the fields and eat on a break. On a similar busy day we stop home and instead of unloading and putting it all away we can put some onto a plate - takes 5 mins!

Instructions for plating up

  • Butter a slice or two of a seeded loaf, place on top one or two mackerel fillets.
  • Chop some tomatoes and cucmbers and scatter over
  • Chop a few cudbes of chesse on the side and a dollop of pickle.
  • Lay on a few lemon slices and rip and sprinkle on some parsley
  • Season to taste
