Ingredients
- 1 Tbsp. sunflower oil
- 400 grams sashimi grade tuna (centre-cut)
- 200 grams soba noodles
- 1 cup soy beans (podded, edamame)
- 1 cucumber (Lebanese, cut into wedges)
- 1 pea sprouts (punnet snow, trimmed)
- 1 avocado (sliced)
- 2 spring onions
- pickled ginger (to serve) and sesame seed
- Marinade for Tuna
- 2 tsp. caster sugar
- 1 tsp. wasabi paste
- 1/3 cup soy (ponzu, citrus)
- 2 Tbsp. rice wine (mirin, Japanese)
- 2 tsp. fish sauce
- 1 lime
- Soak the noodles in boiling water for 5 mins - drain then add all ingredients and stir fry in the sunflower oil for 5 mins
- Serve and garnish with giner and sesame
